If you’ve never had a Bee’s Knees Cocktail, you’re missing out. It’s a gin based Prohibition-era cocktail, similar to The Last Word Cocktail. And it’s really easy to make at home with only three ingredients. It’s also really good.
The Bee’s Knees Cocktail is made with gin, honey syrup and lemon. It is said the honey and lemon were added to mask the juniper scent of the gin during Prohibition. They were probably also added to mask the taste of the bad gin during that period. I’m guessing gin was probably not as great back then as it is today.
In my opinion, this drink will convert any non-gin drinker. It has a beautifully fresh flavor that can be enjoyed year round.
Many recipes for the drink today use lavender honey syrup. I’ve had it both ways and can say I enjoy both equally. What I make at home depends on if I have any lavender on hand and how much effort I want to put forth.
Or you could be prepared and make some lavender honey syrup ahead of time. That way it’s ready in the fridge whenever you want a drink. That’s probably what a smart person would do. Hmm…
- 2 ounces gin
- ¾ ounce honey syrup (or lavender honey syrup)
- ¾ ounce fresh squeezed lemon
- Sprig of lavender for garnish
- Combine all ingredients in a cocktail shaker with ice.
- Shake and strain into a chilled martini glass.
- Garnish with lavender sprig.
