I’ve had fresh peach cocktails on the brain every since I made the peach margarita. Peaches in booze scream summer to me. As does this fresh peach mojito made with Bacardi Dragon Berry Rum.
My plan originally was to make this peach mojito with white rum. But when I opened the liquor cabinet, I saw the bottle of Bacardi Dragon Berry Rum staring me in the face. Dragon Berry rum is an exotic infusion of strawberries and dragonfruit. We’ve used the infused rum before in a dragon berry mojito recipe. And also in a KINKY Liqueur cocktail aptly titled the KINKY Dragon.
So, back to this peach mojito recipe.
Fresh peach, mint and strawberry infused rum are a good combo. And they are exactly what you should be drinking on hot afternoons. And the summertime is full of hot afternoons.
Ripe, juicy peaches break up easily with a few hits from the muddler. As you drink it, the little bits of pulp are a nice treat. But I don’t recommend using a bendable straw for this drink. The peach pulp will get stuck. File that under lesson learned.

- ½ fresh peach, skin removed
- 5-6 mint leaves
- ½ fresh squeezed lime
- 2 ounces Bacardi Dragon Berry Rum
- Soda water
- Sprig of mint, slice of peach and an organic strawberry for garnish
- In a highball or collins glass, muddle the peach with mint leaves and fresh squeezed lime.
- Add rum.
- Fill glass with ice.
- Top with soda water.
- Garnish with a sprig of fresh mint, a slice of peach and a strawberry.
