I’ve been so happy with my new bottle of raspberry liqueur that I used in the Raspberry Mojito. So, I’ve been doing all sorts of experimenting with it. Such was the case with these raspberry and pomegranate sorbet martinis. They are absolutely perfect for a summer cocktail!
I started with adding the raspberry liqueur to my regular pomegranate martini recipe.
I liked the drink but it felt very one note so I added orange juice. As I was drinking it after a long hot day on the back porch, the idea hit me that I could make it even better with a scoop of sorbet instead of juice.
Naturally, I set off to Trader Joe’s the next day and picked up a small carton of mango sorbet.
The result…a sorbet martini that doubles as dessert. In my book, we call that winning. Especially when you are enjoying this cocktail after a long hot day outside.
If you really wanted to be daring, you could make your own mango sorbet. I haven’t tried yet but I’m sure it would taste better than the store bought stuff. The recipe seems simple enough although you have to have an ice cream maker.
Raspberry Pomegranate Sorbet Martini {aka Red Pombet Martini}
Ingredients
2 ounce vodka
2 ounce raspberry liqueur
4 ounces pomegranate juice
2 scoops mango sorbet
4 raspberries and 2 mint sprigs for garnish
Preparation
In a cocktail shaker, combine vodka, raspberry liqueur and pom juice with ice.
Shake and strain into two chilled martini glasses.
Add a scoop of mango sorbet to each glass.
Garnish with two fresh raspberries and a sprig of mint.
Makes two martinis.
