The nice thing about mojitos is that they are very easy to customize with fresh fruit. We’ve made variations like the Blackberry Mojito, Lemon Mojito and Raspberry Mojito. Today’s creation is a Strawberry Pomegranate Mojito.
I would say this strawberry pomegranate mojito is a mix between the strawberry grapevine vodka cocktail and the pomegranate martini. Organic strawberries are muddled with mint and fresh squeezed lime juice. Pomegranate juice adds some sweet tart to the mix. If the drink needs a little sweetening, add some simple syrup or sugar.
In the summer, strawberries are delicious to add to cocktails. They are in peak season and are fun to muddle. You can even blend them into a strawberry puree for drinks such as the Cowgirl Razzberry-Tini and the Strawberry Margaritas. They even delicious is strawberry infused vodka. Just like mojitos, the possibilites are endless when it comes to strawberries in the summer.
You want to buy organic strawberries if you can find them. Even better, buy locally grown from a farmer’s market. Or even better than that, grow your own if you can. I haven’t done this yet in my garden for fear the dogs will eat them. Maybe one summer I’ll add them in next to the peppers and tomatoes.
Strawberry Pomegranate Mojito
One large or two medium organic strawberries, washed with tops removed
5 mint leaves
1/2 fresh squeezed lime
2 ounces white rum
2 ounces pomegranate juice
1 TBSP simple syrup
1 strawberry and mint sprig for garnish
Muddle strawberry and mint leaves with juice from the lime in a highball glass.
Pour in white rum, simple syrup and pomegranate juice.
Add ice and top with soda water.
Garnish with strawberry and mint sprig.
Makes one strawberry pomegranate mojito.
